Light meals round up

Flowers are waking up and hay-fever sufferers around our country can feel it in the air.... Spring is here! Maybe this list of easy, light and fresh meals (all in one - easy to access - place) will get you ready and inspired for the new season ahead!

With Spring starting to peek through, signalling an end to winter 2018, I thought it well to make a round up of all my favourite go-to light meals of last summer.

1.Tempura prawn wraps

If this crunchy, fresh and delicious meal doesn’t get you in the mood for summer, nothing will!

Not only sporting two of my favourite things: “prawns” and “deep fried”, but also super easy to put together and takes less than 30 minutes! A winner all ’round!

2. Quiche

Everyone’s favourite lunch option at coffee shops, and for good reason! Low-Carb and filled with all your favourite fillings, you’ll want to make this recipe a regular in the coming months. Perfect for lunch or a light dinner, and takes less than 60minutes!

3. Sticky chicken wings

Nothing says “weekend” quite like licking sticky sauce of your fingers next to the pool, amiright? This is one of my all time favourite recipes/guilty pleasures! (So “serves 8” can be loosely translated to “serves 1 – me”)

It’s perfect for a lazy day at home, light dinner or appetizer at your next braai!

4. Sweet and sour pork chops

Not so much a “summer meal” as it is the perfect “week night meal”. Taking only 30 minutes to make, and consisting of ingredients we all have in our kitchens, this super easy recipe is a full-proof favourite for those busy weekdays.

5. Pan fried Hake

A healthier version of our favourite deep fried hake, and so easy to put together. This is another one of my go-to mid-week recipes, taking only 20 minutes, as you can cook it straight from the freezer!

It’s light, fresh and healthy(-ish), what’s not to love?!
